采后处理对菠萝营养成分的影响

摘要:
贮藏期间,杀菌剂处理可以推迟采后菠萝可溶性糖含量的减少,而对可滴定酸含量没有明显的影响。采后贮前加热40℃24h处理的菠萝,其可溶性糖、可滴定酸等营养成分的变化与对照果实没有明显差异。与对照果实相比较,GA3处理果实除可溶性糖含量下降明显减少之外,可滴定酸和抗坏血酸含量显著增加。
